{tasty tuesday}: spinach and blueberry salad

This is one of my favorite cookbooks {thanks to Aunt Ann}, Texas Tables from the Junior League of North Harris and South Montgomery Counties! Here is an easy yet tasty salad! I'm in the mood for some "summer like" recipes! You with me?! :)

 

Blueberry Dressing:
1/2 cup raspberry vinegar
1 shallot
1 tablespoon sugar
1/2 pint blueberries
1 cup olive oil

Spinach Salad:
10 ounces spinach, stemmed
1 pint blueberries
1/2 cup pecan pieces, toasted
1/2 cup crumbled bleu cheese

For the dressing, process the vinegar, shallot and sugar in a bleder until the shallot is finely chopped. Add the blueberries and process until combined. Pour into a bowl and whisk in the olive oil until emulsified.

For the salad, toss the spinach, blueberries, pecans and cheese in a large salad bowl. Add the dressing and mix until coated. Serve immediately. Serves 4 to 6.

{five months}

Dear Ella,

Five months, already? I think I fall more in more {and I don't know how it's possible} in love with you each and everyday - with every smile, giggle, coo, cough, sneeze....okay okay, that's enough! You are rolling over more and more {from your tummy to your back and your back to your tummy}. Daddy and I have to keep a close watch on you, or you'll roll all the way across the living room! You are still alert as ever. You don't like taking many naps at Ria's {babysitter} because you sure wouldn't want to miss out on all the fun! So...lucky for mommy and daddy, you are sleeping through the night; however, you woke {actually scared} yourself last night when you rolled onto your tummy for the first time in your bed. I'm hoping this is something you'll just get use to and not wake up everytime! :) We've learned that when you start talking, you're gonna keep on and keep on! You sure have a lot to say {and you don't even have words yet}! I guess that's a good thing since your mommy is a Speech Path! We love you to the moon and back sweet baby girl!

  Has it really been since Valentines Day that I last posted?!? We have been busy at the Dearmore casa! We went to the beach this past weekend for the annual Dearmore Mardi Gras party! What a fun time it was for all! {cheerleader in the making}

Ella loved getting to watch the Super Bowl! I actually think she was just excited about seeing Tom Brady on TV! hehe! Here are a few pictures from our "little Super Bowl" party this year! (We had fun, very low key night with Gram and Double)!

Here is a beautiful picture (one of hundreds) my dad took while in Uganda. He returned from his 3 week long adventure yesterday. While looking through his pictures, I came across this and wanted to use it for my "sun" picture! Isn't God's creation so beautiful?

{bouncing, eating and rolling oh my!}

Ella has been a very busy little girl! As you can see, she is now eating rice cereal, or should I say, still trying to figure out what in the world we are putting in her mouth! :) She is loving her new Baby Einstein bouncer (thanks to Grandmom, Aunt Jen and Aunt Kim for this great gift). She is discovering new shapes, sounds, colors, lights, etc. I highly recommend this bouncer! Ella also began rolling from her back to her tummy and her tummy to her back. What a new world we are in!
